Ingredients for Mediterranean Chickpea Salad:

For the Salad: chickpeas (also known as garbanzo beans), English cucumber, cherry tomatoes, red onion, and feta cheese.

This combination of ingredients makes for a light, refreshing, and also flavorful bean salad. You can add additional ingredients such as additional fresh veggies, sun-dried tomatoes, kalamata olives, capers, artichoke hearts, green onions, fresh parsley, fresh dill, fresh mint, red pepper, green pepper, creamy avocado etc. to bring an even bigger flavor. You can also incorporate black beans or goat cheese in place of feta.

Just note if you add a lot of extra veggies, you will want to increase the amount of dressing you make as well to accommodate the added volume.

Chickpea Salad Dressing: Avocado oil, fresh lemon juice, garlic, salt, black pepper, and dried oregano yield a zesty, herby simple vinaigrette that is both simple yet fresh and flavorful. 

The avocado oil can easily be replaced with olive oil or vegetable oil, and you can replace the lemon juice with cider vinegar, red wine vinegar, or rice vinegar.

To make this a vegan chickpea salad recipe, simply omit the feta cheese.

How to Make Mediterranean Chickpea Salad:

Drain and rinse the garbanzo beans and pat them dry with a paper towel.

Transfer the garbanzo beans to a large bowl along with the cucumber, cherry tomatoes, onion and feta cheese.

In a measuring cup or small bowl, whisk together the ingredients for the dressing.

Pour the dressing over the salad and toss until everything is well-coated. Taste the chickpea salad for flavor and add more salt, lemon juice or feta cheese to your personal taste.

Serve immediately or store in an airtight container in the refrigerator. Leftover salad will stay fresh in the refrigerator for up to 5 days.

Dressing:

  • 2 Tbsp avocado oil
